Ingredients:
- 3 ripe bananas
- 2 cups whole wheat flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup coconut oil (or any other vegetable oil of your choice)
- 1 teaspoon vanilla extract
- 1/2 cup chopped walnuts (optional)
Instructions:
1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
2. In a large mixing bowl, mash the ripe bananas until smooth.
3. Add in the coconut oil and vanilla extract, mixing well to combine.
4. In a separate bowl, whisk together the whole wheat flour, baking soda, and salt.
5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
6. If desired, fold in the chopped walnuts for added texture and flavor.
7. Pour the batter into the prepared loaf pan, spreading it out evenly.
8. Bake in the preheated oven for about 50-60 minutes, or until a toothpick inserted into the center comes out clean.
9. Once done, remove the banana bread from the oven and allow it to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
