  • 2 cups all-purpose flour
  • 1 cup unsweetened applesauce
  • 1 cup almond milk (or any non-dairy milk of your choice)
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup chopped nuts or chocolate chips (optional)

Instructions:

  1. Preheat your oven to 350°F (180°C) and line a muffin tray with paper liners.
  2. In a large mixing bowl, combine the flour, baking powder, baking soda, and salt. Mix well.
  3. In a separate bowl, whisk together the applesauce, almond milk, vegetable oil, and vanilla extract until well combined.
