Today I bring you a recipe, which, without knowing it yesterday morning, this was going to be my last creation, as I call my desserts.
I will miss you all very much, because as I have mentioned previously in other publications, I consider you part of me. I started this world of baking, 3 years ago, as part of psychological rehabilitation, due to a depression generated by my illness, which I have been dragging for 12 years.

Ingredients of requeson cake and quince candy with thermomix
BASE
- 170 grams cookies
- 80 grams butter (melted)
FILLING
- 500 grams cottage cheese
- 4 eggs
- Lemon zest
- 150 grams sugar
- 1 sachet of flan potax (no sugar added)
- 100 ml milk
- 175 ml cream (for whipping)
- 25 grams cornstarch
COVER
- 200 grams sweet quince
- 8 tablespoons water
- 2 leaves neutral gelatin
Preparation of requeson cake and sweet quince with thermomix
BASE
- Cookies in the glass,
- 10 seconds / speed 6
- remove to a bowl and add the melted butter. We mix.
- We line base and sides of the mold with baking paper, pour the dough and distribute by surface.
- We take to the fridge while we continue with the recipe
FILLING
- We dilute the flan sachet in the milk and set aside
- Eggs and sugar in the glass,
- 40 seconds / speed 4
- then the cheese and zest,
- 10 seconds / speed 5
- followed the flan and cream
- 10 seconds / speed 4
- finally the cornstarch
- 6 seconds / speed 4
- We take base out of the fridge and pour over,
- Oven previously preheated to 190°, heat up and down
- Bake for about 45 min, after checking the toothpick, it comes out clean. The center will shake, but it will be done.
- Turn off and ajar the oven door and leave inside for about 20 min.
- After that time, remove and let cool to room temperature.
COVER
- Put the gelatin to hydrate in cold water.(8 min)
- My quince has a very dense consistency, so I process it in the thermomix, along with the water,
- 8 seconds / speed 5
- Drain the gelatin and melt it in the microwave (barely 10 sec), add it to the glass, mix,
- 5 seconds / speed 4
- Our cake will already be cold, pour the quince on top, put in the fridge for about 2 hours.
Notes
You can replace cottage cheese with similar ones, ricotta, fresh cheese or even with quark, these, like cottage cheese, are dairy products obtained from milk whey, they contain a higher percentage of water, thus reducing the amounts of fat, in the composition of the cheese.
