Ingredients of Honey and lemon cake with thermomix
- 375 gr wheat flour
- 1 on chemical yeast (Royal type)
- Pinch of salt
- 200 gr honey
- Zest and juice of 1 large lemon (about 100 ml of juice)
- 5 eggs (M) separated yolks from whites
- 215 ml milk
- 170 ml mild olive oil
- Pinch of cinnamon (optional)
Preparation of honey and lemon cake with thermomix
- We start by sifting the dry ingredients (flour, yeast and cinnamon)
- 10 seconds / speed 8 Set aside and reserve
- Butterfly in blades, add the egg whites and a pinch of salt
- 4 minutes / 37°, speed 3
- then, same time and speed but without temperature.
- Set aside and reserve.
- Without removing the butterfly, we add the yolks and honey (this is warmed for a few seconds in the microwave to make it more liquid
- 6 minutes / speed 3.5
- then we add the zest, juice, milk and oil
- 2 minutes / speed 3.5.
- We remove the butterfly and add the reserved dry ingredients.
- 6 seconds / speed 4.
- We add the reserved whipped egg whites, little by little and with enveloping movements.
- We grease the mold and pour the dough, tap it lightly against the table to remove any air bubbles.
- Preheated oven to 175°!, heat up and down
- We bake for about 40/45 minutes / or until the toothpick comes out clean.
- We turn off and remove.
- Let it cool for a few minutes to be able to unmold, unmold and let it cool on a rack.
